I finished making the beer at 1:30am, just like the last two. This one is a hefeweizen, with a recipe that claims to be a Franziskaner clone.
Came in a little low on the gravity - 1.042 instead of 1.052-1.054. I'll blame it on the math I did to get from dry malt extract to liquid malt extract, and the fact that liquid malt extract only comes in one size. I should top it up with some DME next time. Or just bite the bullet and go all-grain. This extract thing is starting to annoy me.
anybody want to make a logo for the "1:30am brewery" or related theme? I'll put it on bottles!
